My mom found a recipe for these lemon kisses sometime during my childhood, and they quickly became my favorite cookie of all time. I’ve made them so often, I don’t need to follow a recipe anymore and can whip them out in about 15 minutes.
I had to prove to a certain someone that I was capable of baking. I may not understand the intricacies of cooking, but I can hold my own with any recipe whose main ingredient is sugar.
Lemon Kisses (EASY!)
Temp: 375
Baking time: 10 minutes (or until bottoms are a golden brown)
1 1/2 c. butter
3/4 c. sugar
1 tablespoon lemon extract
2 3/4 c. flour
Hershey’s Kisses
Semi-sweet chocolate chips
Powdered sugar
Mix butter, sugar, lemon extract, and flour. (I usually use a mixer instead of trying to blend by hand. Also, add the flour last and add about a half a cup at a time.) Chill until the dough is firm enough to form into a ball (don’t freeze). Use about a teaspoon of dough and roll into a ball around a Hershey’s Kiss. Bake for 10 minutes at 375 degrees.
Sprinkle with powdered sugar and top with melted semi-sweet chocolate chips. The chocolate chips will have a better consistency if melted with about a tsp. of butter per every half cup of chips used.
They were good! Even better when still warm!
